Chocolaty Chia Pudding

This chocolaty chia pudding is my current favorite! In fact, it’s creamy, rich, and HEALTHY! Additionally, it’s vegan, raw, and best of all? Simple. It has a base of 4 ingredients: chia seeds, carob powder, coconut milk, and maple syrup.

Benefits of Chia Pudding

Because the base of this pudding is chia seeds, the benefits are numerous! In other words, it’s packed with calcium, iron, magnesium, and protein. In addition, chia seeds are a good source of omega-3 fatty acids and fiber.

Chia pudding also contains carob powder. Carob powder is caffeine-free, full of antioxidants, and fiber.

The combination of these ingredients create a decadent dessert that can be eaten for breakfast guilt-free!This chia pudding can aid in weight-loss and diabetes prevention.

Chocolaty Chia Pudding

Ingredients: 

1 C Coconut Milk (can be subbed for a homemade milk or soy/almond/whatever)

1/3 C Chia Seeds

1/4 C Carob Powder (can  be subbed for cacao powder, but carob is cheaper and caffeine-free)

Maple Syrup for desired sweetness. I do a light drizzle, but if you like it extra sweet,

Optional: few drops vanilla extract and a sprinkle of cinnamon

Directions:

Whisk together all ingredients together in a bowl and refrigerate overnight. Enjoy this chia pudding plain or topped with nuts, fruits, or whatever you please 🙂 I love adding pomegranate, raspberries, and strawberries.
